Description
Glutinous rice—also known as sticky rice or sweet rice—is a variety of Asian rice characterized by opaque grains and a highly chewy, sticky texture when cooked. It is distinct from other rices because it consists almost entirely of a starch called amylopectin and contains virtually zero amylose.
