Pork cheeks are the small, intensely flavorful muscles located in the hollow of a pig's cheek, just beneath the eyes. Because the pig uses these muscles constantly, the meat is very lean but loaded with connective tissue, yielding a melt-in-the-mouth texture when slow-cooked
