Tapioca
Description
Tapioca is a starch extracted from the root of the cassava plant, a tuber native to South America. It is virtually pure carbohydrate and is naturally gluten-free. Because of its neutral flavour and gelling properties, it is commonly used to thicken soups, bake gluten-free goods, and make chewy desserts.
