Cocoy Banana

A "cocoy" banana is a local name in Dominica for a stubby, creamy banana. Also known globally as the burro banana (in Mexico) or saba (in the Philippines), this variety is shorter and thicker than the standard Cavendish, with a slightly tangy, starchy, and lemony flavor.Because it is not as sweet as regular bananas, it is rarely eaten raw. Instead, it is a versatile cooking staple.
